By the use of cover-crops, compost and other regenerative ag techniques we have taken the organic matter (OM) levels in our soil from 2% up to 7%. That may not sound like much but it makes a massive difference to the water holding capacity of our soil and hence to the resilience of our vineyard in dry seasons. For each 1% change in OM per Ha the soil can hold approx 130,000 to 150,000lts per Ha more. This means that across our 11HA vineyard we have increased the water holding capacity by an eye-wateringly 8.25m litres
